Apparently I'm still stuck on Pineapple...lol, todays recipe is another one with pineapple. I must have Hawaii on the brain. That does sound nice right now. A spot on the beach, a nice cold drink with a wee umbrella in it, and a cabana boy...tall and muscular, tan, dark hair and piercing blue eyes, a bit sweaty...oops, that might be an entry for a different kind of journal.
Grilled Pork and Pineapple
Ingredients
4 3/4-inch-thick boneless top loin pork chops
1 peeled and cored fresh pineapple
3 Tbs. orange marmalade
1/2 cup plain yogurt
1/4 cup roasted, lightly salted cashew halves, coarsely chopped
Directions
1. Sprinkle pork lightly with salt and pepper. Cut pineapple into 1/2-inch-thick slices; set aside.
2. For a charcoal grill, place chops on the rack of uncovered grill over medium coals 4 minutes. Turn; add pineapple. Brush chops and pineapple with 2 tablespoons of the marmalade. Grill 3 to 5 minutes more or until an instant-read thermometer inserted in pork registers 160 degrees F, turning pineapple.
3. Meanwhile, combine yogurt and remaining marmalade. Arrange pineapple and chops on plates. Top with yogurt; sprinkle nuts. Makes 4 servings

Wow...it's been a long time since a simple trip to the grocery store boosted my self-esteem as much as it did last night. I go up to the check out, behind 2 others. Then man in front of me...bald (shaved), a bit above average height, average weight, average looking...turns around and said "smile". I kind of laughed and said it had been quite a week.
The clerk had to go and get change for his $50 at which point he turns back to me and say's "do me a favor, write down your phone number". I told him I couldn't, I'm not available. He laughed and said "that's the problem these days, women don't wear rings".
Funny, usually I wear my ring, but Rylie has been bugging me alot to wear my rings. So I took it off the other day to get her mind off of it and forgot to put it back on. Oops! I guess I won't make that mistake again. Although, it was nice to have someone try to pick me up. It was like a compliment. Sometimes its just nice to hear that someone thinks your attractive.
After four kids and hitting the age that I've hit...(you didn't really think I'd say it out loud did you?)...it's nice to know that men still think your attractive. It's not that the ol' man hasn't ever told me. It's just that after so many years...well, guys don't think that kind of stuff is important. And flowers? Well, I've got a garden and they'll just die anyway...so why waste the money? LOL, I know all the logic behind it. Jewelry? "But babe, I don't know what you want".
Not a problem...the bills are paid. Occasionally we get out alone and have fun. He remembers to tell me he loves me almost daily, even if he can't remember my birthday the day before his dad's, lol. And even if he doesn't remember the birthday and anniversary (10th this year)...he does occasionally do special things on ordinary days. That's cool.

Wow! Four kids, a loving husband, being flirted with AND pineapple!! Ya can't beat that!! Okay, the beach in Hawaii just might put it all over the top! LOL. Linda
