Recipe--Creamy potato pork chop bake

Good Monday Morning!  Here's a little recipe from my cookbook.  I'm not sure where this came from originally.  I keep a file on my computer of a lot of the recipes I find that I want to try.  I hope to one day print it out and make a cookbook for myself and my kids.  I just keep finding so many good recipes to add to it and haven't printed it out yet, lol.

CREAMY POTATO PORK CHOP BAKE
1 tablespoon vegetable oil
6 pork chops
1 10.5 ounce can condensed cream of mushroom soup
1/2 cup milk
1/2 cup sour cream
salt and pepper to taste
1 24 ounce package frozen hashbrown potatoes, thawed
1 cup shredded Cheddar cheese
1 1/2 cups canned French fried onions

Heat oil in a large skillet over medium high heat. Add pork chops and saute until browned. Remove from skillet and drain on paper toweling. Meanwhile, preheat oven to 350F/175C. I

n a medium bowl mix together soup, milk, sour cream and salt and pepper to taste. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions. Mix together and spread mixture in the bottom of a 9 x 13 inch baking dish.

Arrange pork chops over potato mixture. Cover dish and bake in the preheated oven for about 40 minutes, or until internal temperature of pork has reached 160F/70C. Remove cover; top with remaining cheese and onions and bake uncovered for 5 more minutes. Makes 6 servings.

What a wonderful way to begin the day, I have an interview today.  It is for a part-time job at a little store not too far away.  I'm not looking for a lot of hours, 20 max and it really needs to be evening and weekends. 

I certainly don't want to have to pay someone to watch Rylie.  Paying a babysitter when your making minimum wage kind of defeats the whole purpose.  Seriously, if I'm making about $7 (+ some change) before taxes and then have to pay someone $3 (or more) an hour to babysit, I'm not really making much. 

Oh well, I'll go in and see what kind of hours and what times they need and see what's up.  Hopefully it will be something that will work for us.  Bush is going to be in office for some more time, and we can't continue to have Ray's income decrease while the cost of living rises and rises.  I really hope the next President is a family and working poor friendly.

It's getting real hard to watch the ol' man continue to bust his butt at a job where he makes less than he did 8 years ago.  I hate seeing his frustration and consider leaving the work he really enjoys doing (HVAC) because he feels like he can't take care of his family and that his boss is taking advantage of him (and his fellow workers).  Really, in this economy who would leave a job where they are at least getting a paycheck (even if they are being taken advantage of) for an uncertain future and possibly no job?  That man really has his employees over a barrel.  I'd really like to get a face to face with him.  Grrrrr!

Hopefully I'll get a job where I can contribute enough to help the ol' man out.  I just hope I'm not sacrificing my child to improve our income.  I'm so ambivilent about all of this.  My main goal, after helping the family, is to be able to save enough to get a start on my home based Funeral DVD business.  That's where I take family pictures and put them to music for families who've lost a loved one.

Thanks for the recipe... I am going to pass it along to my mother in law who really likes pork.  
Sounds like the 'old man's' problem lies more with a immoral boss then a non-family oriented President.

I've been with my husband for 5-6 years now and I've watched his income decrease due to the economy.  He went from where he could easily support us to I NEED to have an income in order for us to make ends meet.  

With my husband, it's been TWO companies that folded and went out of business due to the economy.  Don't tell me it's not due to the poor president ... it IS.

Good luck with the interview, I hope you find something that will work with your scheduling needs.  Having a babysitter wouldn't be prudent at those wages.

Sounds like a great recipe. It's definitely not easy for a man to lose confidence in himself on the work front. Doc (my other half) has been a guitar teacher for over 15 years. No one has the patience anymore to learn a viable skill. Why would you when you can download music at the drop of a hat, or with such idiocities as Guitar Hero out there you can "pretend" to be something your not....At his age considering a new career is not easy at alll. (Hugs) Indigo

Perhaps you'd come out much more ahead if you watched others children & could stay home with your daughter.  I am sorry things are not going well for your husband on the work front.
